In basic terms, the food we eat gets reassembled into body mass. The food we eat gets digested and broken down into its most basic parts. It travels through the bloodstream and gets reassembled into our tissues: skeletal muscle, fat, bones, cells, etc.

I had Dr. Almeida answer your question and here is his answer:
“Our metabolic rate determines how much energy (food) we must consume to maintain our body mass. If we don’t eat enough food to replace the energy we burn (to run our metabolism), we will lose body mass (as glycogen, fats, and other macromolecules are burned for fuel). If we eat more food than we need to replace the energy used, there will be leftover chemical energy that is stored by the body as glycogen or fat. This is the basis of weight (mass) loss and weight gain” Dr. Almeida
